ABV: 13,5 - 14%.
AREA OF PRODUCTION: Terracings in Locorotondo (BA).
VINEYARD CULTIVATION AND HARVESTING: The Guyot method is used.
The vineyards are located on the terraces that embrace the town of Locorotondo. Each rope is crowned by a rose. The flower, together with the plant, as well as giving the typical scents that are transmitted in the next wine, help viticulture in the field by manifesting parasitic and cryptogamic attacks. In this way, the grape production is much healthier and receives a very low number of treatments in the field. Harvesting is done rigorously by hand and in cases, the grapes are immediately brought to the wine cellar and to the destemmer crusher.
GRAPE YIELD PER HECTARE: 120 quintals.
VINIFICATION: In red at a controlled temperature. Particular attention in the maceration phase, where the production of fresh fruit and floral scents is privileged. Limited aging in wood
ORGANOLEPTIC FEATURES: Limpid, ruby red colour with purple reflections. Quite consistent. Interesting complexity and intensity. It recalls the scents of fruit in alcohol like cherry blossoms and cherries, overripe blackberry and mulberry. Wilting flowers, red rose and violet. It blurs in a touch of toasting wood and vanilla.
To the taste it expresses its dryness, soft enough and balanced. Full-bodied wine with a pleasant and young tannins. Fine and balanced, it ends with the harmony of a young wine.
SUGAR CONTENT: Still wine with a sugar content of 8 g/L.
WINE AND FOOD PAIRINGS: Red meat, cheese and seasoned salami. Grilled vegetables. Risotto or braised food.
SERVICE TEMPERATURE: 16°C.
CONSERVATION: It is advisable to conserve the bottle in a vertical position, in a cool and dark place.
