NAME: “Primate” Primitivo IGT Salento.
TYPE OF PRODUCT: Still red aged wine 2014.
VINEYARD VARIETY: Primitivo 100%.
AREA OF PRODUCTION: Vineyards owned by the company belonging to the production area of Primitivo in Puglia.
VINEYARD CULTIVATION: The Guyot method is used. The vineyards are situated in hilly terrains with a medium texture, tending to be clayey.
GRAPE YIELD PER HECTARE: 120 quintals.
VINIFICATION: Harvesting of grapes is gradual, generally in September; the ripening of the grapes reaches a high degree of sugars, making possible the next potential alcoholic degree in the maceration phase to produce noble fragrances of fruit in jam and wilting flowers. The vinification takes place at a controlled temperature, with soft pressing and in red. The vinification of the Primate is the one dedicated to wine that will be aging over time with wood. Its maximum expression will only be achieved after years, guaranteeing the softness of tannins and great complexity.
ORGANOLEPTIC FEATURES: Noble, clear wine, garnet red colour with violet reflections. It expresses great intensity, complexity and fineness. In the scents it recalls the fruit in jams, dried figs with almonds, cherries in alcohol, mulberry, blackberry and peaches. It continues with the wilting flowers. Perception of aging over time with toasting wood; licorice, coffee and cappuccino notes. In closing, a spice touch dedicated to black pepper and nutmeg with the enveloping alcohol-wrapping.
SUGAR CONTENT: Still red wine with a sugar content of 10 g/L.
WINE AND FOOD PAIRINGS: Precious red meat with a certain texture. Grilled food. Dishes of great complexity with presence of mushrooms. Recommended overcooked food and in terracotta cooking pots.
SERVICE TEMPERATURE: 18°C.
CONSERVATION: It is advisable to conserve the bottle in a vertical position, in a cool and dark place.
