AREA OF PRODUCTION: Prosecco D.O.C. district in Veneto.

VINEYARD CULTIVATION: The Guyot-Cortina method is used. The vineyards are situated in lush plains, which offer a rich resource for the vine lands. The abundant water availability favors the production of a mineral-rich wine. Regrassing of the vineyard is done in order to help the vineyard's production and growth.


VINIFICATION: Grapes are harvested in the optimal maturation phase, where good acidity and a good sugar content are used for the second fermentation. On bringing thr grape in the cellar, the temperature is immediately cut down. A soft pressing and controlled fermentation allow us to obtain a good sparkling base.

SECOND FERMENTATION: The fermentation is done with the Martinotti or Charmat method in steel autoclaves at 15-18 ° C for about 15 days. Finally, the temperature is lowered to about -4 °C until bottling.

ORGANOLEPTIC FEATURES: Crystalline, straw yellow with silver reflections. Charming perlage with fine, numerous and persistent grain. It gives great refinement and intensity to the smell. Scents of white pulp fruit like raspberries, plums, yellow melon, maltose and even a touch of kiwi. Floral perception of lily and dog rose. Hints of ginger candy. It is dry, refreshing, with acknowledged acidity and remarkable mineral content. Great balance and harmony of senses. Fine and persistent sparkling wine.

SUGAR CONTENT: Dry sparkling wine with a sugar content of 13 g/L.

WINE AND FOOD PAIRINGS: Tasty fried fish, squid, octopus, shrimp and cod. Typical Apulian dishes with pumpkin flowers in pastel. Cured meats and cheese.


CONSERVATION: It is advisable to conserve the bottle in a vertical position, in a cool and dark place.
